I love my cast iron enamel pot, it is so easy to clean up and makes cooking a delight and hassle-free. The best was to braise me is in a cast iron pot. Braised meat is so delicious and you can make it low fat and clean. This braised meat used a variety of veggies to create a base for the sauce it marinated in. I served this over roasted Kale. This would be delicious with quinoa or brown rice.

Brown beef in cast iron enamel pot with olive oil for 3-4 minutes each side. Saute onions until clear. Add remaining ingredients switch to low and set for 3-4 hours. Add more water if it simmers down.

- ½ cup onion chopped
- 2 cloves garlic
- 2 medium potatoes chopped
- 1 large tomato chopped
- ½ cup pomegranate red wine vinegar
- 2 tbl agave
- 4 tbl Dr. Braggs All Purpose Soy Sauce Alternative
- Fresh sprigs of thyme, oregano, and parsley
- 2-3 cups of water
